Creative Cabbage with a Twist

Slaw with Mango and Blue Cheese Dressing

Cole slaw is a favorite all year long, and no doubt we all have a favorite go-to recipe. But sometimes, don’t you want to change it up just a bit? How about this new version for St. Patrick’s Day on Thursday?

To the rescue comes inventive Malibu caterer Diana Temple with her  slaw that will shake you out of your cabbage doldrums. Not only is it flat out gorgeous, it takes favorite flavors to new heights with a slight twist. To a lovely mix of green and purple cabbages, she adds ripe mango to sweeten it up, pine nuts for crunch, and a delicious blue cheese dressing for tang.

Diana not only creates fantastic food for the weddings, parties and other affairs she caters, but she also develops delicious recipes for the Malibu Farmers Market, where she is the Culinary Director.

She has a word of advice on serving salads at parties, potlucks and other events. Rather than a big leafy green salad, she recommends a chopped salad like a slaw if the party or occasion demands stand-up eating. It’s simply easier to maneuver a chopped salad on the plate and from fork to mouth!

Genius.

Recipe: Shockingly Delicious Slaw with Mango and Blue Cheese Dressing

Shaved means very thinly sliced.

In a large bowl combine:

4 cups thinly shaved green cabbage
2 cups thinly shaved purple cabbage
1/3 cup mango, cut in small shards (peach or nectarine in season could be substituted)
1/4 cup thin sliced green onion
3 tablespoons roasted pine nuts

For dressing, place in blender:

3/4 cup buttermilk (or 2% milk)
1/4 cup light colored vinegar, such as rice wine vinegar
1/4 cup mayonnaise (she prefers Veganaise)
5 ounces blue cheese (such as Gorgonzola)
2 tablespoons fresh parsley leaves
2 cloves garlic, chopped
1 teaspoon Worcestershire sauce

Blend dressing ingredients until smooth, and then pour some of the dressing over salad ingredients in bowl. Toss to combine and coat ingredients. Add additional dressing if it looks dry to you, but it is fine not to use all the dressing; simply save for another use.

Serves 6-8.

You call that a TWIST? It’s more like a CHAOS (no offense :D )! Lol. Well, I’m not to judge and I’m intrigued as well since because of the mango and blue cheese addition, I’ll try this out sometime so to know how this would actually taste like.
