It’s nearly Christmas! But if you still need time to make a few Christmas goodies, no worries; I’ve got some super-easy treats for you that whip up in a flash – any time of year.
No Bake Sandwich Cookie Balls
1 package of chocolate and cream sandwich cookies (like Oreos)
18 oz. cream cheese, softened and cut into bite sized pieces
Chocolate chips
Sprinkles (optional)
Crush the cookies by either placing them in a Ziplock bag and running over them with a rolling pin, or by placing them in a food processor. Add the cream cheese chunks, stirring or processing until completely blended together. Chill the mixture for at least 25 minutes.
Roll the batter into balls. Place balls on a baking sheet lined with waxed paper and put the whole in the freezer for 30 minutes. In the meantime, melt some chocolate chips over very low heat (or by microwaving; see recipe below for instructions). Using tongs, dip the balls into the melted chocolate. Dry on waxed paper. If desired, add sprinkles while the chocolate is hardening.
Quick & Easy Chocolate Dipped Pretzels
1 (10 oz.) bag pretzels
1 (12 oz.) bag chocolate or white chocolate chips
Place the chocolate chips in a microwavable bowl and microwave for a few seconds. Stir, and continue microwaving for a few seconds at a time until chocolate is completely melted. Stir once more.
Dip the pretzels, one at a time, into the melted chocolate. Place on a baking sheet lined with waxed paper and refrigerate for 10 minutes.
No Bake Cheesecake and Chocolate Bars
18 chocolate and cream cookies (like Oreos), crushed
¼ cup butter, at room temperature
10 oz. semisweet chocolate chips
¾ cup whipping cream
3 oz. cream cheese, softened
Cover the inside of a 9x9x2 in. baking pan with aluminum foil. Spray the foil lightly with oil.
Melt 1 oz. of chocolate. In a bowl, stir together the crushed cookies, butter, and melted chocolate. Press into the bottom of the prepared pan, creating a crust. Refrigerate.
In a microwave safe bowl, stir together 8 oz. chocolate and whipping cream. Microwave until almost completely melted (about 2 minutes), stopping to stir once. Stir again to make smooth.
Beat the cream cheese with an electric mixer until smooth. Add the whipping cream mixture and combine. Spread this mixture over the crust. Refrigerate for 5 minutes. Sprinkle with remaining chocolate chips and refrigerate until set, at least 4 hours. Cut into bars.
